Bolivia - Finca Tacu (Java)
This is another collection of Bolivian Java that we source from Finca Los Rodriguez. Finca Los Rodriguez owns a large coffee export hub for the export of speciality coffee for the world market. This operation is lead by Snr Pedro Rodriguez
What we have here is a lot from Finca Tacu, a microlot in the Fincas Samaipata. Finca Los Rodriguez owns at least 7 other farms in Samaipata such as the earlier selection that we have in the middle of 2020, Finca El Fuerte. There are wide variety of coffee which is produced by Finca Los Rodriguez that includes, Java, Geisha and some other exotic microlots variety.
This java in particular is planted at 1650 masl and is process as washed. At Finca Tacu, Snr Pedro hire pickers from the nearby community to carefully handpick coffee during the harvest . This pickers are trained to select the ripest cherries. The coffee is processed the same day at the Rodriguez El Fuerte mill. First the coffee is soaked in water and all floaters will be removed. It is then pulped and dry fermented without water for 46 hours. The coffee is then dried slowly using a mechanical dryer for 75 hours at a temperature of 40c. Once coffee is dried, it is transported to La Paz for it to be rested, milled and sorted at the La Luna milling plant.
The ground coffee has a dry fragrance of frangipani and orange peel. At first sip, the coffee has a citrusy notes such as lime and orange peel with a slight notes of floral fragance. In mid section, a green tea like tartness with a caramel tones after taste. The coffee is clean and has a delicate notes for a washed coffee.
